Is on-premise outdated?

It's a trade, not a relic. You give up remote dashboards and gain immunity to internet and cloud-vendor problems. For a high-volume single location, that trade often wins.

Can I check sales from home?

Not from a phone app the way cloud systems offer. End-of-day reports can be exported and sent, but live remote dashboards aren't the model.

What if the hardware fails?

That's the real risk of on-premise, and why we spec backup terminals and same-day support paths during install.

Who is HotSauce?

Why do nightclubs pick it?

Can I add online ordering?

There's a delivery module for restaurants that want it. If online ordering is central to your model, though, Paradise or Clover fit that life better, and we'll say so.
